Teriyaki Pineapple Salmon




Ingredients

  • 2 tbsp vegetable oil
  • 1/2 tsp salt
  • 1/2 tsp freshly ground pepper
  • 2 salmon fillets skin on
  • 1/3 cup teriyaki sauce
  • 1/2 tsp ginger powder
  • 1/4 cup pineapple juice
  • 4 pineapples slices


Instructions

  1. Heat vegetable oil in a pan. Sprinkle salt and pepper on both sides of salmon fillets.
  2. Once the pan is hot, place the fillets in the pan, skin side down and sear for 5 minutes until the skin is crispy. Turn the fillets and cook for another 5 - 8 minutes until the fish is fully cooked.
  3. Meanwhile, make the sauce:
  4. Mix teriyaki sauce, ginger and pineapple juice in a small sauce pan and bring to boil. Simmer for 3-4 minutes.
